Family Favorite Pumpkin Muffins

Y'all, I have made these pumpkins about 10 times now since the start of the school year. My kids love them, and their super easy! Put some music on, throw the ingredients together, wear some fuzzy socks while they bake and let the pumpkin spice aroma fill your home. It's a win-win.

Ingredients:


  • 1 3/4 cups all purpose flour
  • 1 cup sugar
  • 1/2 cup dark brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1.5 tsp pumpkin pie spice
  • 2 eggs
  • 1 15oz. can pure pumpkin puree
  • 1/2 cup coconut oil, melted
  • 1 tsp vanilla

Instructions


  1. Preheat the oven 375 degrees, prepare muffin baking pan with spray or liners
  2. Measure out the flour, sugars, baking soda, salt and spices in a medium bowl. I like to wish it all together to encorporate.
  3. In a larger bowl, whisk together the eggs, pumpkin puree, coconut oil and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir together. Don't over mix.
  5. Evenly distribute the batter into each muffin well. They'll be almost full.
  6. Bake muffins for around 25 minutes, use a toothpick inserted into the center to check doneness, if it comes out clean, you know their done.


Notes


Oven times vary, I always set my timer just under suggested times and start watching as to not over bake.


Try it with mini chocolate chips folded in after step 4.


You can sub coconut oil for veg oil.


Try mini muffin pan, just reduce the baking time.
